The Derveni family honors its strict family tradition at all stages of production. Olives are picked by hand and harvested at the right time of year to obtain the highest possible quality, not quantity. The olives are processed under strict and controlled conditions with cold press as extraction method. Thus, the olive oil retains its organoleptic and antioxidant properties. This also causes Derveni Olive Oil to maintain an oxygen level between 0.3% – 0.8%. The olive oil is packaged to the correct standard to protect it from oxidation that can be caused by sun and oxygen in the atmosphere.
